  • Unsalted butter – I prefer to use unsalted butter, but if you only have salted butter handy, you can use it. In this case, skip the salt called in the recipe.
  • Cream cheese – Make sure you use the full-fat version that comes in blocks.
  • Sugar – Regular white granulated sugar o caster sugar. I do not recommend reducing the amount of sugar or changing the type of sugar, as it will change the texture of the cookies.
  • Salt – I prefer kosher or sea salt. If you only have table salt handy, I recommend reducing the amount to half.
  • Vanilla extract – For optimal flavor, reach for pure vanilla instead of imitation. Even better, tryhomemade vanilla extract! If you are looking for non-alcoholic vanilla flavoring, I recommend Simply Organic Vanilla Flavoring.
  • Flour – Standard all-purpose flour works best here; skip the cake flour, bread flour, and wheat flour. Make sure to measure accurately; a kitchen scale is the best way to measure your ingredients, in my opinion.
  • Cornstarch – You can substitute for potato starch 1:1.
  • Gel food coloring – I recommend using gel or paste food colors since they are highly concentrated, and you’ll end up using less. This is the food coloring I use.
  • Sprinkles colored sugar or chocolate jimmies to garnish (optional)

Step 1 – Make And Color Your Cookie Dough

Make the cookie dough. You’ll cream the butter and sugar together, then add the cream cheese and the extract. Finally, add the dry ingredients and mix just until combined.

Color your cookie dough. If you want to use a few colors, divide your dough into parts and color it. I recommendgel food coloring. Gel icing color allows you to add a small amount to achieve bright color.

Do not grease or line with parchment paper the baking sheets or the cookie dough won’t stick.

What is the difference between a spritz cookie and a butter cookie? ›

What is the difference between spritz and butter cookies? These cookies are nearly identical, except for one ingredient: egg. Egg makes the Spritz cookie dough a bit easier to work with, but it also helps the cookies keep their shape when baked.

Why won t my spritz cookies come out? ›

Too cold and it won't release, too warm and your cookies may lose their shape. If you find the dough has gotten too warm, put it in the fridge for a couple minutes until it's at the right consistency. Once your dough is ready, simply roll it into a log shape.

What is the secret to moist cookies? ›

Cornstarch helps product soft and thick cookies. Using more brown sugar than white sugar results in a moister, softer cookie. An extra egg yolk increases chewiness. Rolling the cookie dough balls to be tall and lumpy instead of wide and smooth gives the cookies a bakery-style textured thickness.

Why won't my spritz cookies stick to the cookie sheet? ›

*If your cookies are not sticking to the cookie sheet well, try refrigerating the pans for 10 to 15 minutes to chill them. Dough sticks better to a cooler sheet. Never use non-stick cookie sheets!

Why do my spritz cookies spread in the oven? ›

Excess Sugar and Fat

If your cookie contains excess sugar or fat, it will spread while baking. If your first batch of cookies spreads, try adding a few tablespoons of flour to help thicken the remaining dough.

Why do my spritz cookies taste like flour? ›

Improper flour measurement is the #1 cause of your cookie dough being too dry or the cookies tasting like flour.

Why are my spritz cookies tough? ›

Simply adding the flour to the stand mixer and beating it in runs the risk of overdeveloping gluten and giving you a tough or dense cookie (not what you want after all that work with the creaming). Instead, the best method is to add the flour and mix it in by hand, stopping as soon as no dry flour remains.

What is the best cookie sheet for spritz cookies? ›

Insulated Cookie Sheets

Pros: Cookie sheets are insulated to prevent the bottoms of the cookies from browning too much or too quickly and are ideal for when you're baking thin or delicate cookies, or treats should be lightly colored, such as spritz cookies and shortbread.

Can you use store bought cookie dough in a cookie press? ›

Loading the Cookie Press

Make sure the log is short enough and thin enough to fit in the cookie press barrel. To save time, buy premade cookie dough that comes in a log shape. Avoid using cookie dough that has big pieces like chocolate chips or nuts in it.

How to fix crumbly spritz cookie dough? ›

To avoid this, try using as little flour as possible while preparing to roll your dough. Dry – “Dry” or “Crumbly” dough is a product of over-mixing or using too much of any ingredient during the mixing process. This can be reversed by adding one to two tablespoons of liquid (water, milk or softened butter) to your mix.

Should I use baking soda or baking powder in cookies? ›

Baking soda is typically used for chewy cookies, while baking powder is generally used for light and airy cookies. Since baking powder is comprised of a number of ingredients (baking soda, cream of tartar, cornstarch, etc.), using it instead of pure baking soda will affect the taste of your cookies.

How can I make my cookies fluffier instead of flat? ›

Butter keeps cookies fluffy in two ways. First, creaming cold butter with sugar creates tiny, uniform air pockets that will remain in the dough it bakes up. Second, cold butter naturally takes a longer time to melt in the oven.

Why do my cookies get hard after they cool? ›

Cookies become hard when the moisture in them evaporates. This can be caused by leaving them out in the air for too long, baking them for too long, or storing them improperly. The lack of moisture makes the cookies hard and dry, which makes them difficult to enjoy.

Is there a trick to using a cookie press? ›

If it's too cold, it'll be hard to squeeze out of the pres. If it's too warm, it'll be too soft, and it won't hold its shape when baked. Holding your hand on the tube will warm the dough, so try to use just one hand on the trigger – place your other hand on the cookie sheet to keep it from moving.

How to prevent spritz cookies from spreading? ›

Chilling cookie dough helps prevent spreading. The colder the dough, the less the cookies will over-spread into greasy puddles. You'll have thicker, sturdier, and more solid cookies. Whenever I make cookies, I plan ahead and chill the cookie dough overnight.

How do you get decorations to stick to spritz cookies? ›

Decorating spritz cookies jimmies, sugars or nonpareils.

If you add sprinkles after baking the cookie dough your sprinkles will not stick to your cookies without using melted candy or icing. Oftentimes, shaped sprinkles will melt in the oven so sticking with jimmies, sugar and nonpareils are best.
