- Andouille Sausage
- Boneless Skinless Chicken Thighs
- Cajun Seasoning
- Olive OIl
- Butter
- Onion
- Celery
- Red Bell Pepper
- Minced Garlic
- Heavy Whipping Cream
- Parmesan Cheese
- Cauliflower Rice
- Chopped Green Onions
Directions
Heat the olive oil in a skillet over medium high heat. Add the chicken to the heated skillet, and season with half of the cajun seasoning. Saute until the chicken is completely cooked through. Remove and set aside.
Place the sausage into the skillet, and saute until browned and heated through. Remove and set aside. Drain any oil from the skillet, and reduce the heat to medium.
Melt the butter in the skillet, and then stir in the onions, peppers and celery. Saute until the vegetables have softened.
Mix in the garlic, and saute another 30 seconds. Pour in the heavy whipping cream, and simmer until thickened.
Stir in the parmesan and remaining seasoning until well combined.
Return the meat to the skillet, and stir to combine.
Mix in the cauliflower rice, and simmer for another 5 minutes.
Serve garnished with green onions.
